Ingredients

  • 2 large cucumbers, diced
  • 4 medium tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare the vegetables: Wash and dice the cucumbers into bite-sized pieces. Dice the tomatoes. Thinly slice the red onion. If the onion is too strong, you can soak the slices in cold water for 10 minutes to mellow the flavor.
  2. Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
